It was a gorgeous weekend, but I’m kind of ready for fall food. So, I turned to the trusty Chickpea and Sausage stew recipe that my brother shared with me. It’s from Real Simple, and, appropriately, it is quite simple — and delish. The only prep involved is chopping an onion, some parsley and cilantro, and draining/rinsing some chickpeas. There’s some simmering time involved, but I put my girl to bed while making this, so once the stuff is chopped it’s pretty hands-off.
