Having eaten frozen dinners the prior two nights, I really felt compelled to make something tasty and healthy on Friday– without going to the groc or taking time away from my ever-important drinking-on-the-couch-while-watching-movies indulgence.
This was my answer.
Will had bought chicken breasts a few days prior (which we’d nearly forgotten), and I’d bought frozen whole green beans at Trader Joe’s (a freezer staple). I didn’t have green onions or cashews– I used pecans, which aren’t the same, but aren’t bad, either– but all of the rest of the stuff was on hand. Man, what magic a little 5-spice powder can do. Serve this with jasmine or basmati rice (so much better than the plain white stuff). Link to Emeril’s recipe and his “Asian spice mix” are below. I’d leave out the salt in the spice mix– it isn’t needed.
