I was frantically searching online for quick recipes that involved turkey tenderloins I had been inspired to buy. I ran across a Food Network recipe for sage pesto crusted turkey, in which you made your own pesto. Yeah. Right. I had a jar on hand and proceeded to enjoy this ridiculously easy weeknight dinner, with super tasty leftovers for sandwiches. This kind of thing makes me feel, like, capable and stuff. Love.
1) Buy turkey tenderloins, any kind of potatoes, and a jar of pesto.
2) Pre-heat oven to 400.
3) Wash and cut potatoes up into medium-ish chunks. Toss in a lil olive oil, salt and pepper.
4) Slather pesto on turkey.
5) Dump potatoes and turkey into a roasting pan, and roast for 30-ish minutes, until the turkey reads 160.
6) Let turkey rest for 10 min. and then get it in your belly.
