Red beans and rice

Snowy afternoon + empty frig = this recipe (from my sister).
1) Cook instant brown rice in chicken broth.
2) Bust open a can of red beans, kidney beans, and diced tomatoes.
3) Heat up with olive oil and seasonings of choice (she used Lawry’s and chili powder). Add a little chicken broth if you want.
And, eat it! If you had an onion on hand, that probably would have been good, sautéed in olive oil before adding beans. But, this worked– healthy, cheap, and didn’t involve leaving the house. A triumph!
