Quick Pork Chop Marinade

I’m not always super awesome at planning ahead. Marinades generally require planning ahead. That is a big bummer, because marinades are marvelous. However, this one is super easy, quite tasty, and only takes an hour. Even I can make that happen! http://www.foodnetwork.com/recipes/sunny-anderson/easy-grilled-pork-chops-recipe.html

Balsamic-Marinated Pork Chops & Grilled Peaches

I have no idea what “clean eating” is, but apparently, this is marvelously clean. More important to me is that it is marvelously easy and delicious. Bonus: it looks way more complicated than it is. The flavor profile! The balance of sweet and savory!  So amaze your friends and enjoy simple, honest food. Recipe credit … Continue reading

Red beans and rice

Snowy afternoon + empty frig = this recipe (from my sister). 1) Cook instant brown rice in chicken broth. 2) Bust open a can of red beans, kidney beans, and diced tomatoes. 3) Heat up with olive oil and seasonings of choice (she used Lawry’s and chili powder). Add a little chicken broth if you … Continue reading

Quickie Pesto Turkey

I was frantically searching online for quick recipes that involved turkey tenderloins I had been inspired to buy. I ran across a Food Network recipe for sage pesto crusted turkey, in which you made your own pesto. Yeah. Right. I had a jar on hand and proceeded to enjoy this ridiculously easy weeknight dinner, with … Continue reading

I don’t even know if this qualifies as half-ass, it’s so easy. – Trader Joe’s frozen chicken tenders – spaghetti – Trader Joe’s marinara sauce (in a can) – shredded mozzarella, Italian herbs, parm, salt and pepper Bake the chicken tenders at 350 for 20 minutes, then add mozzarella, herbs, and parm (though it probably … Continue reading

Stir-Friday: Chicken and Green Beans

Having eaten frozen dinners the prior two nights, I really felt compelled to make something tasty and healthy on Friday– without going to the groc or taking time away from my ever-important drinking-on-the-couch-while-watching-movies indulgence. This was my answer. Will had bought chicken breasts a few days prior (which we’d nearly forgotten), and I’d bought frozen … Continue reading

Easy Peasy Pizza

I love pizza. I love it like the way Brits love their tea and meaningless figureheads. And like the way addicts love their crack. Yes, that kind of love. But having moved out of NY a long time ago, I’ve resigned myself to the fact that I’ll never get NY style pizza anywhere I go, … Continue reading

Making breakfast for company? Make this.

I consider a bowl of cereal and some toast “making myself breakfast.” When company is over, though, I feel compelled to up my game (tough to do from that very high standard, I know).  So I get my ham and egg cup on. Super easy, super satisfying, super delish. Also, leftovers work just fine for … Continue reading

Vegetable samosa burgers

I love Trader Joe’s. And one of the reasons for my affection is their most excellent selection of frozen entrees. I discovered the veggie samosa burgers during a traffic jam in front of the frig at work, where they were endorsed by an Indian woman who was heating one up for lunch. Grill them, nuke … Continue reading
